Whats Cookin? @nomnompaleo

We’re back with another episode of What’s Cookin from @grocerslist. Each week we’re cookin up a recipe from a food blogger we love.

In our house, we have a 7 year old and a 3 year old and we're in the midst of trying to expand their menu horizons. I'm sure you can relate. Its been feeling like we’re stuck rotating through pasta, burger night, quesadillas, chicken fingers and the usual kid menu suspects.

My wife and 7 year old daughter were flipping through Nom Nom Paleo’s cookbook, and my daughter pointed to the paleo fish sticks, saying they looked great and she’d love to give those a try.

Perfect.

So for taco tuesday, we thought @nomnompaleo's paleo fish sticks were the PERFECT way to re-introduce her to fish, inside a taco. She devoured two of these. The fish was amazing and the tacos were a huge hit!

The recipe called for plaintain chips. We ended up swapping that for potato chips we had in the pantry instead. I do love plaintain chips, so maybe we’ll give that a try next time we make these.

We blended up the chips with the dry spices in our ninja, and mixed together the eggs and cassava flour. Honestly the whole thing took maybe 10 minutes.

And my wife makes a killer taco slaw, so we put that inside the taco and wow. Can’t wait to make these again.
