Whats Cookin? @unboundwellness

We’re back with another episode of What’s Cookin from @grocerslist.


Each week we’re cookin up a recipe from a food blogger we love.

My mother in law was diagnosed with graves disease years ago, and she inspired all of us to adopt a more paleo, grain free lifestyle.

Since then we’ve been cookin @unboundwellness recipes for years. Huge fans here.

And after a recent trip to the greek islands, we fell in love with the classic lemon orzo soup, so we have been looking for an excuse to make our own version back home.

When Michelle posted her paleo version the other day using cauliflower rice, my wife texted me immediately.

So here it is. Absolutely a 10/10.

We wanted to make our own shredded chicken so we definitely had a little prep work, but dicing was minimal for this recipe and we just threw the kale in. It was simple, approachable and absolutely delicious. Felt like authentic greek chicken soup but with cauli rice for the paleo and grain free people out there.
