Sticking to themes every week is a super easy way to simplify meal planning. Which is exactly what makes this recipe so good. Because who doesn’t love Taco Tuesday?! Especially when it only requires *4* ingredients. Make some guac and add your favorite toppings and you’re good to go!

2. Creamy Tomato Pasta by @pinchofyum

A creamy pasta without dairy? Sign me up. So what gives it the creamy taste? A mixture of blended cashews and your favorite pasta sauce (who doesn’t love Rao’s?). So good, no one will notice the difference! And if you’re looking to add protein, you can always add your favorite meat sauce (bolognese pairs perfectly with this). Add a simple side salad and you have the perfect easy weeknight dinner that makes amazing leftovers.

3. Grilled Salmon and Pesto Veggies by @thehungryhobbit

Another simple weeknight dinner, this grilled salmon and pesto veggie dish is perfect in a pinch. If you’re not up for making your own pesto, Rocket Fuel Pesto is amazing. It’s made in small batches and they have dairy free options that don’t miss. Add your favorite veggies (broccolini anyone?!) and you’re good to go!

Bonus: Gut Healing Bone Broth Hot Cocoa by @happy_balancedlife

Since it’s the first week of 3 things to cook, I HAD to include a bonus recipe. And this bone broth hot cocoa will get you through the winter and beyond. The collagen adds a little extra protein (and has amazing benefits for the skin!) and you can always swap out the coconut milk for your favorite non-dairy milk (almond milk works perfectly as a substitute). Trust me. This one will be on repeat in your house.
